Malay braised Fish in aromatic broth

A very simple and healthy dish bursting with flavour

Ingredients
  • 2 whole mackerel (about 180gm each, gutted and cleaned)
  • 2 cloves garlic (sliced)
  • 1/2 inch galangal (sliced finely)
  • 1 piece dried tamarind skin
  • 1 tsp toasted dried shrimp paste
  • pinch of salt to taste
  • 2 whole birds eye chillies (bruised)
  • 4 pieces okra/lady's finger

Instructions

1.

Boil water with all ingredients except chilies and okra.

2.

When the water boils, add the fish and lower the heat to a simmer (So the fish doesn't not break up). Add salt and adjust the taste.

Once the fish is cooked (about 8 mins) add the okra and chilli and let it soften (About 2 mins).
