All the softness and creaminess of gnocchi in a healthy and delicious way.

Place the cauliflower rice from frozen in a large pan and cook it until the water has all evaporated. Drain the cauliflower rice using a kitchen towel. (Alternatively you can place the cauliflower rice in the fridge overnight to get it unfrozen before draining it with a towel)

Place the drained cauliflower rice in a large bowl along with the egg yolks, the shredded cheese, the parmesan, the almond flour, salt, pepper, and all the seasonings. Mix everything well together.

Make the gnocchi by taking a nut of dough and making it round with your hands. Place them on the counter with a bit of flour. To make them look like real gnocchi you can also pass them on a fork slightly pressing to make the furrows.

Add butter in a large pan, add the chicken cut in cubes. Let it cook for 15 min stirring repeatedly to evenly cook it.

Add the mushrooms washed and cut in slices.

Season with salt, pepper, garlic and oregano. Add a spoon of flour.

Stir well and add a cup of almond milk along with the nutmeg.

Cook it for about 10 min letting the sauce thicken and adjust with salt and pepper if needed.

In the meantime, bring a large pot of salted water to a boil. Once boiling, add the gnocchi into it and cook for one minute.

Drain the gnocchi and add them to the sauce.

Serve it with a nice amount of parmesan and enjoy it!

Tip
Accompany this with half a plate of vegetables or salad in order to balance the meal. Low-Fat Option: Instead of the sauce, sauté only the chicken and mushrooms without using butter. For the dough, use light cheese.
