Irish Lamb Stew with Cauliflower and Potato Colcannon

4

20 mins

A hearty, warming Irish stew of tender lamb slowly simmered with carrots, butternut squash, pearl barley and thyme, served with a lighter colcannon of creamy mashed cauliflower and spring cabbage. It’s real comfort food in a bowl. Lean lamb provides protein and iron, and the barley, vegetables and cabbage add lots of fibre.

Ingredients

Irish stew

  • 2 tsp extra virgin olive oil
  • 400g lean diced lamb, trimmed of visible fat
  • 1 onion, sliced
  • 3 carrots, diced
  • 500ml reduced-salt lamb stock (or vegetable stock for vegan)
  • 80g pearl barley, rinsed (or 80g brown rice for gluten-free)
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • 250g butternut squash, diced (fresh or frozen)
  • Black pepper

Cauliflower and potato colcannon

  • 300g potatoes, peeled and cut into chunks
  • 300g cauliflower florets (fresh or frozen)
  • 200g spring cabbage, finely sliced
  • 100ml semi-skimmed milk (or unsweetened soya milk)
  • 1 tsp extra virgin olive oil
  • 1 tsp garlic powder
  • Black pepper
Needed kitchenware

A large lidded casserole or heavy saucepan, a large saucepan, and a potato masher or stick blender.

Instructions

1.

Heat the oil in the casserole over a medium-high heat. Brown the lamb in 2 batches (3–4 minutes per batch), then transfer to a plate.

2.

Add the onion and carrots, and cook until starting to soften (5 minutes).

3.

Return the lamb to the pan with the stock, pearl barley, thyme and 250ml water. Bring to the boil, then cover and simmer gently for 50 minutes, stirring occasionally.

4.

Add the squash and simmer, covered, until the lamb and barley are tender and the squash is soft (25–30 minutes). Add a splash of water if it gets too thick, and season with pepper.

5.

About 25 minutes before the stew is ready, cook the potatoes in boiling water for 5 minutes. Add the cauliflower and cook until both are very soft (12–15 minutes), adding the cabbage for the last 4 minutes. Drain well.

6.

Lift out the cabbage and set aside. Mash or blend the cauliflower with the warm milk, oil, garlic powder and pepper until smooth. Fold through the cabbage.

7.

Serve the stew with the colcannon.

8.

Slow cooker: After step 2, transfer everything except the squash to a slow cooker and cook on low (6–7 hours). Add the squash for the last hour.

9.

Make ahead: The stew tastes even better the next day.

Storage information

Leave to cool, then cover and refrigerate the stew and colcannon separately for up to 3 days. Reheat until piping hot all the way through. Freeze the stew for up to 3 months; defrost overnight in the fridge and reheat until piping hot. The colcannon can be frozen for up to 1 month.

Tip

All-cauliflower mash: Use 600g cauliflower instead of the potatoes for a lighter, lower-carb colcannon.
