Spooky, cheesy courgette "pizzas" wrapped in cheese bandages with olive eyes peeking out. They're a fun Halloween snack children will love to help make. There's a secret layer of white beans in the tomato sauce, which adds protein and fibre, and every bite sneaks in extra vegetables.
1.
Heat the oven to 220°C (200°C fan) and line a baking tray with baking paper.
2.
Cut each courgette lengthways into 4 slices about 1cm thick. Lay them on the tray and bake until starting to soften (10 minutes).
3.
Meanwhile, mash the beans with a fork until fairly smooth, then stir in the passata, herbs and garlic granules.
4.
Spread the bean and tomato sauce over the courgette slices.
5.
Lay the cheese strips across each slice at slight angles, like mummy bandages, leaving a small gap near the top for the eyes.
6.
Bake until the cheese has melted (8–10 minutes).
7.
Add 2 olive slices to each mummy for eyes, and serve.
