Halloumi, Tomato and Egg

This is one of my favourite vegetarian breakfasts! I adore grilled halloumi and it works so perfectly with the roasted tomatoes and eggs.

Ingredients
  • 2 eggs (cooked any style)
  • 1/2 packet of halloumi, sliced.
  • 1 tsp olive oil
  • 400g small tomatoes (I love sugarbelle or san marzano)
  • Pepper

Instructions

1.

Pre-heat oven to 180c.

Lightly coat the tomatoes with olive oil on a baking tray and season with pepper. Cook for about 20 minutes.

3.

Meanwhile, heat a grill pan over medium high heat. Lightly brush the halloumi with olive oil. Grill for about 2 minutes each side, when they have a nice char.

Cook your eggs your prefered way, and then add the halloumi and tomatoes to the plate.
