Grilled Tofu with Mince and Spring Onions

4

10 mins

Golden grilled tofu topped with savoury chicken mince cooked in taucu (fermented soy bean paste), garlic and a splash of Shaoxing wine. Tofu and chicken together make this a protein-packed meal, and green beans and edamame cooked in the same pan add fibre and colour.

Ingredients
  • 2 x 280g blocks firm tofu, drained and patted dry
  • 2 tsp rapeseed oil
  • 30g onion, thinly sliced
  • 1 garlic clove (around 5g), thinly sliced
  • 200g chicken breast mince (or 200g frozen soya mince for vegan)
  • 2 tbsp (30g) taucu (fermented soy bean paste)
  • 1 tsp reduced-salt soy sauce (or tamari for gluten-free)
  • 2 tsp Shaoxing wine (or 2 tsp water plus an extra ½ tsp black vinegar for halal)
  • 1 tsp black rice vinegar
  • 500g green beans, trimmed and halved (fresh or frozen)
  • 200g frozen edamame beans
  • 1 tsp toasted sesame oil
  • 30g spring onions, sliced into rings
  • 1 x 250g pouch cooked brown rice, to serve

‍

Needed kitchenware

Taucu is sold in jars at Chinese and South-East Asian grocers. Yellow bean sauce works too.

Instructions

1.

Cut each tofu block into 4 thick slices and brush with 1 tsp of the rapeseed oil.

2.

Heat the frying pan or griddle pan over a medium-high heat. Cook the tofu until golden and crisp (3–4 minutes each side), then transfer to a serving plate.

3.

Add the remaining 1 tsp rapeseed oil to the pan with the onion and garlic. Cook until soft (2 minutes).

4.

Add the chicken mince and cook, breaking it up, until browned and cooked through with no pink meat (5 minutes).

5.

Stir in the taucu, soy sauce and Shaoxing wine. Add the green beans, edamame and 4 tbsp water, cover and cook until the beans are tender (4–5 minutes).

6.

Meanwhile, heat the rice pouch following the pack instructions.

7.

Stir the black vinegar and sesame oil into the pan, then spoon the mince and beans over the tofu. Scatter with spring onions and serve with the rice.

Storage information

Leave to cool, then cover and refrigerate for up to 2 days. Reheat until piping hot. Not suitable for freezing, as the tofu turns spongy.

Tip

Lower fat: Use 1 tsp oil for the tofu and cook the mince in a splash of water. Crispier tofu: Press the tofu between kitchen paper under a heavy board for 10 minutes before cooking. Air fryer: Cook the oiled tofu slices at 200c for 12–15 minutes, turning halfway.
