A healthy version of a zesty fruit tart.
For the tart:
For the filling:
1.
Add all the ingredients for the tart in a bowl and mix it well until you get a nice dough.
2.
Let it rest in the fridge for at least half an hour.
3.
Preheat your oven to 338°F (170°C).
4.
Butter a tart pan and sprinkle it with flour.
5.
Roll out the base of the tart with a rolling pin between two baking papers using the tart pan as size.
6.
Remove the top baking paper. Place the tart pan upside down on top of the tart base and turn everything together.
7.
Adapt the tart to the tart pan using your fingers. Cut the excess in the edges. Using a fork pierce the base of the tart and with the same fork press the edges.
8.
Cook it at the base of the oven for about 30 min or until golden brown. Let it cool.
9.
In the meantime, in a bowl prepare the cream adding the yogurt, the protein scoop, a bit of lemon zest, and the sugar. Mix well.
10.
When the tart base is cold, add the cream on top. Wash and cut some seasonal fresh fruit. To avoid them getting brown add just a splash of lemon juice to the fruit.
11.
Add them on top of the cream. Slice it, serve it and enjoy it!
