A healthier festive alternative with all the spices and flavour of the holiday season!

Ingredients
  • 2 cups or 220g almond flour (ground almonds) 
  • 2 tbsp coconut flour (optional) 
  • 1/4 cup or 40g coconut sugar 
  • 1/2 tsp baking soda 
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger 
  • 1/4 tsp ground allspice 
  • 1/4 tsp salt 
  • 2 tbsp melted butter or coconut oil
  • 1 tbsp molasses (optional - can add 30g more coconut sugar instead)
  • 1 egg 
  • 1 tsp vanilla extract

Instructions

1.

Mix all of the dry ingredients and then add in the wet ingredients.

Stir until combined and then refrigerate for about 20-30 mins.

Preheat oven to 175c fan.

Create small balls of the dough and flatten slightly. Place on baking sheet, spacing evenly.

5.

Cook for about 12 minutes when the outsides should be firm but the inside may still be gooey.
