French onion pot roast

This slow cooked one pot meal is so delicious and full of flavour! It can easily be a special occasion dish but also freezes and reheats really well! Serve with green vegetables like steamed kale.

Ingredients
  • 1kg braising beef (I used brisket)
  • Salt and pepper
  • 2 tbsp olive oil
  • 6 red onions, thinly sliced
  • 2 tbsp flour (use almond or coconut flour for low carb)
  • 2 cups beef stock/broth
  • 1 cup red wine (or use another cup of beef broth/stock)
  • 1 tsp Worcestershire sauce 
  • 1 tbsp minced garlic
  • 5 carrots, chopped
  • 2 sweet potatoes, chopped (remove for low carb) 
  • Thyme

Instructions

1.

Season beef with salt and pepper.

Bring a large Dutch oven or slow cooker to medium high temperature with 1 tbsp olive oil.

Once hot, add the beef and sear on all sides. Remove and set aside.

Turn the temperature down to medium low and add one more tbsp olive oil.

5.

Add the onions, some more salt and pepper, and stir. Cover and cook for 10 mins.

Preheat oven to 175c.

Uncover onions and continue to cook until caramelised, stirring frequently. Add in flour and stir.

Add in wine if using, beef stock and Worcestershire sauce. Deglaze, scraping any dark bits from the base of the pot.

9.

Add in beef and vegetables and stir to combine.

10.

Add thyme and then place in oven for 2-3 hours when the beef should be tender.

Serve with a green vegetable like kale. You could also serve with mashed potato or a low carb pasta depending on your dietary pathway

Tip

This is a great way to use a lower cost piece of beef and make it so tender and delicious. For low carb, remove sweet potatoes and serve with green vegetables like kale. For low fat, choose beef with lower fat content.
