Inspired by the French classic, these juicy chicken breasts are filled with ham and melting Swiss cheese. They're brushed with mustard and baked in a crisp, golden almond coating rather than fried, then served with green beans and peas.

Heat the oven to 200°C (180°C fan) and line a baking tray with baking paper.

Cut a deep pocket into the side of each chicken breast, taking care not to cut all the way through. Fill each pocket with a slice of ham and a slice of cheese, folded to fit, and secure with 2 cocktail sticks. Season with the pepper.

Mix the mustard and yoghurt, and brush it all over the chicken.

Mix the ground almonds, flour, garlic granules and paprika on a plate. Press the chicken into the mixture to coat it all over, then place it on the tray.

Bake for 10 minutes. Add the green beans to the tray and bake until the chicken is golden and cooked through with no pink meat, and the beans are tender (15 minutes).

Meanwhile, cook the peas according to the pack instructions.

Rest the chicken for 3 minutes and remove the cocktail sticks. Serve with the green beans and peas.

Storage information
Cool within 2 hours, then cover and refrigerate for up to 2 days. Reheat in the oven until steaming hot all the way through. Freeze the cooked chicken for up to 1 month and defrost overnight in the fridge.
Tip
Food safety: Check that the thickest part of the chicken is cooked through, and remember to remove the cocktail sticks before serving. Flattening the chicken: If your breasts are thick, cover them with baking paper and bash them gently with a rolling pin to an even thickness, so they cook evenly.
