Cod Poached in Tomato Sauce

4

10 mins

Flaky cod gently simmered in a rich, garlicky tomato sauce with peppers, courgette, spinach and creamy white beans. It's light, comforting and made in one pan, with 4 of your 5-a-day in every portion.

Ingredients
  • 1 tbsp extra virgin olive oil
  • 1 onion, diced
  • 1 pepper, diced
  • 1 courgette, diced
  • 3 garlic cloves, crushed (or ¾ tsp garlic granules)
  • 2 x 400g tins chopped tomatoes
  • 1 x 400g tin cannellini beans, drained and rinsed
  • 200g fresh or frozen spinach
  • 4 cod fillets (around 500g), fresh or frozen and defrosted
  • ¼ tsp chilli flakes
  • ½ tsp dried mixed herbs
  • ¼ tsp salt
  • ¼ tsp black pepper
Needed kitchenware
Instructions

1.

Heat the oil in a large, deep frying pan over a medium heat. Cook the onion, pepper and courgette until softened (6–8 minutes).

2.

Add the garlic, chilli flakes and herbs, and cook until fragrant (1 minute).

3.

Stir in the tomatoes and beans. Simmer uncovered until the sauce has thickened (10 minutes). Taste, then season with the salt and pepper.

4.

Stir in the spinach until wilted (1–2 minutes).

5.

Nestle the cod into the sauce and spoon some sauce over the top. Cover and simmer gently until the fish is opaque and flakes easily (8–10 minutes).

Storage information

  • Best eaten fresh. Cool leftovers within 2 hours, then cover and refrigerate for up to 1 day. Reheat gently until steaming hot all the way through. The sauce without the fish freezes well for up to 3 months. Defrost it overnight in the fridge, then reheat until bubbling before adding fresh fish.

Tip

Serving suggestion: For bigger appetites, serve with a slice of wholemeal bread or 150g new potatoes (skin on). CCooking from frozen: Frozen cod fillets can go straight into the sauce. Add 4–5 minutes to the cooking time, and check that the fish is opaque all the way through.ooking from frozen: Frozen cod fillets can go straight into the sauce.
