Satay with Yoghurt Peanut Sauce

4

25 mins (+ marinating)

Tender chicken skewers marinated in turmeric, chilli and fragrant spices, grilled until charred, and served with a creamy peanut sauce made with lemongrass, galangal and Greek yoghurt. It’s a lighter take on the Malaysian classic. Chicken and yoghurt make it high in protein, and the broccoli, cucumber and brown rice add plenty of fibre.

Ingredients

Chicken satay

  • 400g chicken breast, cut into medium cubes (or 400g firm tofu for vegan)
  • 10g fresh red chilli
  • 5g fresh turmeric (or 1 tsp ground turmeric)
  • 50g red onion
  • 2 tsp ground coriander
  • 1½ tsp ground cumin
  • 20ml light coconut milk
  • 2 tsp rapeseed oil
  • Pinch of salt (⅛ tsp)

Peanut sauce

  • 10g dried chillies, soaked in hot water for 10 minutes and drained
  • 20g garlic (around 4 cloves)
  • 100g shallots
  • 1 lemongrass stalk (around 30g), roughly chopped
  • 5g galangal
  • 2 tsp rapeseed oil
  • 1 tsp ground coriander
  • 60g unsalted roasted peanuts, crushed
  • 20g Penang black vinegar (or rice vinegar for gluten-free)
  • Pinch of salt (⅛ tsp)
  • 100g 0% fat Greek yoghurt (or unsweetened plain soya yoghurt for vegan)

To serve

  • 1 x 250g pouch cooked brown rice (or 100g dried brown rice)
  • 400g tenderstem broccoli (or broccoli florets - fresh or frozen)
  • 1 cucumber, cut into chunks

‍

Needed kitchenware
  • Around 10 wooden or metal skewers (soak wooden ones in water for 30 minutes), a blender, a griddle pan or grill, and a small saucepan.
Instructions

1.

Blend the chilli, turmeric, red onion, coriander, cumin, coconut milk, oil and salt for the marinade into a paste

2.

Coat the chicken or tofu, then cover and marinate in the fridge for at least 1 hour, or overnight.

3.

If using dried rice, start cooking it 30 minutes before you want to eat, following the pack instructions.

4.

For the sauce, blend the soaked chillies, garlic, shallots, lemongrass and galangal with 2 tbsp water to a paste.

5.

Heat the oil for the sauce in the saucepan over a medium heat. Fry the paste, stirring, until fragrant and darker (8–10 minutes).

6.

Stir in the coriander, peanuts, black vinegar, salt and 50ml water. Simmer until thick (3–5 minutes). Take off the heat and leave to cool slightly.

7.

Thread the chicken/tofu onto the skewers. Heat the griddle pan or grill to high and cook the skewers, turning often, until charred and cooked through with no pink meat (10–12 minutes).

8.

Meanwhile, steam the broccoli until tender (5 minutes), and heat the rice pouch following the pack instructions.

9.

Stir the yoghurt into the peanut sauce. Serve the skewers with the sauce, rice, broccoli and cucumber.

10.

Oven method: Roast the skewers on a lined tray at 220c (200c fan) for 15 minutes, turning halfway.

Storage information

Store the chicken/tofu and sauce separately in the fridge for up to 2 days. Reheat the chicken until piping hot, and serve the sauce at room temperature. Freeze the cooked chicken for up to 3 months; defrost overnight in the fridge. The sauce isn’t suitable for freezing.

Tip

Lower fat: Use 40g peanuts in the sauce. Lower carb: Skip the rice and serve with extra cucumber and a crunchy salad.
