Chicken Rendang

4

20 mins

A rich, aromatic Malaysian and Indonesian curry of chicken slowly simmered with lemongrass, ginger, shallots, warm whole spices and coconut until the sauce turns dark, thick and clings to every piece. It’s finished with toasted coconut and lime. Chicken provides plenty of protein, and the aubergine, green beans and brown rice add plenty of fibre.

Ingredients

Spice paste

  • 3 lemongrass stalks, roughly chopped
  • 2–3cm piece of fresh ginger, peeled
  • 4 garlic cloves, peeled
  • 4 shallots, peeled
  • 1 tsp chilli flakes

Rendang

  • 1 tbsp desiccated coconut
  • 1 tbsp rapeseed oil
  • 1 cinnamon stick
  • 1 star anise
  • 3 cloves
  • 3 cardamom pods, lightly crushed
  • 1 tsp ground turmeric
  • 2 tsp chilli powder (use less for a milder curry)
  • 6 skinless boneless chicken thighs (around 540g), diced
  • 1 lemongrass stalk, sliced and bruised
  • 80ml light coconut milk
  • 1 aubergine (around 300g), cut into chunks
  • Juice of 1 lime
  • ½ tsp salt and black pepper

To serve

  • 500g green beans, trimmed (fresh or frozen)
  • 150g dried brown rice (or 1½ x 250g pouches cooked brown rice)

Instructions

1.

Blend all the spice paste ingredients with 125ml water until smooth.

2.

Toast the desiccated coconut in the dry frying pan, stirring, until golden (1–2 minutes). Set aside.

3.

Heat the oil in the saucepan over a medium heat. Fry the cinnamon, star anise, cloves and cardamom until fragrant (1 minute).

4.

Add the spice paste and cook, stirring often, until fragrant and darker (8–10 minutes). Stir in the turmeric and chilli powder for 1 minute.

5.

Add the chicken and stir to coat (5 minutes).

6.

Add the sliced lemongrass, coconut milk and 350ml water. Bring to a simmer and cook uncovered, stirring occasionally, for 20 minutes.

7.

Add the aubergine and continue to cook, stirring more often as it thickens, until the sauce is thick, dark and clings to the chicken (20–25 minutes). Add a splash of water if it starts to stick.

8.

Meanwhile, cook the rice following the pack instructions.

9.

Stir in the toasted coconut, lime juice, salt and pepper, and cook for 2 minutes.

10.

Steam or boil the green beans until tender (5 minutes). Remove the whole spices and serve the rendang with the rice and green beans.

11.

Slow cooker: After step 5, transfer to a slow cooker with the coconut milk, lemongrass and 250ml water, and cook on low (6 hours). Add the aubergine for the last hour, then finish uncovered on the hob to thicken.

12.

Storage information

Leave to cool, then cover and refrigerate for up to 3 days. Reheat until piping hot all the way through. Freeze for up to 3 months; defrost overnight in the fridge and reheat until piping hot. Rendang tastes even better the next day.

Tip

Lower saturated fat: Use chicken breast instead of thighs. Lower carb: Skip the rice and serve with extra green beans or cucumber.
