Masala Curry with Your Choice of Protein

2

10 mins

A fragrant, warming one-pot curry of tomato, red onion, ginger, garlic and green chilli with garam masala, cumin and turmeric, made with your choice of chicken, prawns or tofu. Chickpeas and spinach cook in the same pan. Every option is high in protein, and the chickpeas, tomatoes and spinach add plenty of fibre.

Ingredients

Protein (choose 1)

  • 250g chicken breast, diced
  • 250g skinless boneless chicken thighs, diced
  • 250g raw peeled king prawns
  • 250g firm tofu, pressed and cubed (vegan)

Curry

  • 2 tsp extra virgin olive oil
  • 1 red onion, chopped
  • 4 garlic cloves, crushed
  • 1 tbsp fresh ginger, finely grated
  • 1 jalapeño or green chilli, sliced (deseed for a milder curry)
  • 2 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 x 400g tin chopped tomatoes
  • ½ x 400g tin chickpeas (120g drained), drained and rinsed
  • 100g spinach (fresh or frozen)
  • Pinch of salt (¼ tsp) and black pepper
