Sweet, smoky pointed cabbage wedges roasted until charred at the edges, served on cool Greek yoghurt swirled with a vibrant, zesty kale pesto. It's a side dish that steals the show. The kale and cabbage give plenty of fibre and vitamins, and the yoghurt adds protein.

Kale pesto
A blender, mini chopper or food processor for the pesto. Without one, finely chop the kale, nuts and garlic and mix with the other ingredients for a rustic pesto.

Heat the oven to 220°C (200°C fan) and line a baking tray with baking paper.

Brush the cabbage wedges with the oil and season with the pepper. Lay them cut-side down on the tray.

Roast, turning halfway, until tender and charred at the edges (20–25 minutes).

Meanwhile, blend the kale, Parmesan, pine nuts, garlic, lemon juice, oil and 3 tbsp water until smooth. Add 1 more tbsp water if it's too thick.

Spread the yoghurt over a serving plate and swirl through 2 tbsp of the pesto.

Lay the cabbage wedges on top and drizzle over the remaining pesto.

Storage information
The cabbage is best eaten fresh. Keep any leftover pesto in a sealed jar in the fridge for up to 3 days, or freeze it in ice-cube trays for up to 3 months.
Tip
Griddle option: Char the wedges in a hot griddle pan for 4–5 minutes on each side, then finish in the oven for 10 minutes. Using leftover pesto: Stir it through pasta, spread it on toast, or drizzle it over roasted vegetables. Serving suggestion: Lovely alongside roast chicken or the Lemon Garlic White Fish.
