Chapli Kebab

Straight from the streets of Peshawar, these flat, crispy-edged beef kebabs are packed with crushed coriander, cumin, chilli and fresh tomato. Serve them sizzling with warm chapatis and a zingy chickpea salad for a feast that disappears fast!

Ingredients
  • 500g 5% fat beef mince
  • 1 egg, beaten
  • 3 tbsp gram flour (chickpea flour)
  • 1 red onion, very finely chopped
  • 1 large green chilli, finely chopped (use less for a milder kebab)
  • 4 garlic cloves, finely chopped (or 1 tsp garlic granules)
  • Thumb-sized piece of ginger, finely chopped
  • Small handful fresh coriander, chopped
  • 3 tomatoes
  • 2 tsp olive oil
  • 1 x 400g tin chickpeas, drained and rinsed
  • ½ cucumber, diced
  • ½ lemon, juiced
  • 4 wholemeal chapatis (or gluten free version) 
  • 2 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 1 tsp chilli flakes
  • ¼ tsp black pepper
  • ½ tsp salt
Needed kitchenware

A pestle and mortar is handy for crushing the seeds, but a rolling pin and a freezer bag work too.

Instructions

Toast the coriander and cumin seeds in a large dry frying pan for 1–2 minutes until fragrant, then crush roughly.

Deseed and finely dice 1 tomato. Put it in a large bowl with the beef, egg, gram flour, crushed seeds, half the onion, the green chilli, garlic, ginger, half the fresh coriander, the chilli flakes, pepper and salt. Mix well with your hands for 2 minutes.

Shape the mixture into 8 thin, flat patties about 1cm thick.

Heat the oil in the same frying pan over a medium-high heat. Cook the kebabs in batches for 3–4 minutes on each side until browned and cooked through.

Meanwhile, dice the remaining tomatoes. Mix them with the chickpeas, cucumber, the remaining onion and coriander, the lemon juice and a pinch of pepper.

Warm the chapatis in the pan and serve with the kebabs and salad.

Storage information

Leave cooked kebabs to cool, then cover and refrigerate for up to 2 days. Uncooked or cooked kebabs can be frozen for up to 3 months, with baking paper between them. Defrost overnight in the fridge and cook or reheat until piping hot. The salad is best eaten fresh, within 1 day.

Lower carb: Skip the chapatis.
