Enjoy the flavours of a Caprese salad in this Italian-inspired chicken dish. Tender chicken is topped with juicy tomatoes, fresh basil and melted mozzarella, with garlic, balsamic vinegar and spinach adding extra flavour. It’s a simple, satisfying meal made in one pan.
1.
Put the chicken breasts between 2 sheets of baking paper and flatten with a rolling pin to an even thickness.
2.
Mix half the oil with the garlic, salt and pepper, and rub over the chicken.
3.
Heat the frying pan over a medium-high heat. Cook the chicken until golden (5–6 minutes), then turn it over.
4.
Top the chicken with the mozzarella. Cover with the lid and cook until the cheese has melted and the chicken is cooked through with no pink meat (5–6 minutes). If you have a thermometer, it should read 75c. Transfer to a plate and keep warm.
5.
Add the remaining oil, the broccoli and 3 tbsp water to the pan. Cover and cook until just tender (4 minutes).
6.
Add the tomatoes and cook until softened (2 minutes), then stir in the spinach until it wilts.
7.
Return the chicken to the pan, drizzle with the balsamic vinegar, scatter with basil and serve.

Storage information
Leave to cool, then cover and refrigerate for up to 2 days. Reheat in a covered pan or the oven until piping hot. Not suitable for freezing, as the mozzarella turns rubbery.
Tip
For extra flavour, add a little freshly ground black pepper and a few torn basil leaves just before serving. If you prefer a stronger balsamic flavour, drizzle a little extra over the finished dish.
