Blueberry banana cottage cheese muffins

Makes about 12 muffins

I love these muffins for breakfast or a healthy treat for the whole family! Adding cottage cheese for extra protein really helps make these muffins a filling and delicious treat!

Ingredients
  • 300g cottage cheese
  • 2 bananas, mashed
  • 2 eggs
  • 150g oats 
  • 100g wholewheat flour 
  • 1/4 cup pure maple syrup or honey 
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder 
  • 1 tsp baking soda 
  • 100g blueberries

Instructions

Preheat oven to fan 160c.

In a blender, add the cottage cheese and mix on high.

Then add the rest of the ingredients other than the blueberries. Mix on a low setting until just combined.

Fold in the blueberries and then fill the cupcake cases to 3/4 full.

5.

Bake for about 25 mins, or until they feel springy and a toothpick comes out clean.

Serve alone or with greek yogurt and berries.
