I love cooking duck as it feels quite fancy and special. This blackberry sauce adds a nice mix of sweet and spicy to the recipe.

Pre-heat oven to 200c.

Heat a pan over medium low heat. Season the duck breasts with salt and pepper and place in the pan skin side down. Cook for about 20 minutes, when the fat should have rendered significantly

Roast the duck in the oven, skin side up, for about 8 minutes. Allow duck to rest after cooking.

Meanwhile, add all of the other ingredients to a small pot over medium high heat. Stir frequently to combine and continue to heat until the blackberries have mushed and combined.

Serve the duck with blackberry sauce on the side.
