Berry granola yogurt pot

A simple healthy homemade granola pot! Easy to prepare in advance!

Ingredients
  • 50 g oats
  • 40 g mixed seeds, including pumpkin and chia seeds
  • 2 tbsp plain peanut or almond butter
  • 1 tsp butter (or coconut oil)
  • ½ tsp vanilla extract
  • ½ tsp honey, optional

To assemble

  • 100g mixed berries
  • 300 g plain Greek yogurt (or coconut yoghurt)

Instructions

1.

Heat the oven to 180°C fan / 200°C conventional.

Mix the oats and seeds in a bowl. Add the nut butter, butter/coconut oil and vanilla. Mix well.

Spread onto a lined baking tray. Bake for 8–10 minutes, stirring halfway, until golden.

Let the granola cool completely.

Layer the yogurt, berries and granola in two glasses or jars. Drizzle with the optional ½ tsp honey and serve.

Storage information

Store the granola and yogurt separately in the fridge for up to 3 days and assemble when ready to eat. The homemade granola can be stored in an airtight container at room temperature for up to 1 week.
