Berry banana oat bars

These are the perfect breakfast item for busy mornings! Enjoy with some Greek yogurt, nut butter or on their own.

Ingredients
  • 3 bananas, mashed
  • 1 cup/150g chopped berries (can be frozen)
  • 2 cups/180g rolled oats 
  • 2 eggs 
  • 2 tbsp almond butter (optional)
  • 1 tsp vanilla extract 
  • 1/2 tsp baking powder 
  • 1/2 tsp cinnamon (optional)

Instructions

1.

Preheat oven to 170c fan.

Grease a 9 inch square pan or add parchment paper to it.

3.

Add in the bananas and mash, then add all other ingredients and combine.

4.

Use a spoon to make sure the batter is spread evenly.

Bake for about 25 minutes or when firm.

Cool completely before slicing.

Tip

If using frozen berries, you may need to cook for slightly longer.
