Cheesy tortellini, rich tomato sauce, garlicky beef and plenty of spinach — a simple, cosy dinner that’s ready in no time!

Heat the oil in a large pan. Add the onion, or onion powder, and cook for 2–3 minutes. Add the garlic, or garlic powder, and beef. Cook for 5–6 minutes, breaking up the beef.

Add the chopped tomatoes, mushrooms if using, herbs and chilli flakes. Season with salt and pepper. Simmer for 10 minutes.

Cook tortellini according to the packet instructions, then drain.

Stir the spinach into the tomato sauce and cook for 1–2 minutes until wilted.

Stir the tortellini into the sauce. Add the Greek yogurt if using.

Divide between 4 bowls and sprinkle with Parmesan.

Storage information
Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of water. To freeze, cool completely, portion into airtight containers and freeze for up to 3 months; thaw overnight in the fridge and reheat thoroughly.
Tip
For low fat, remove cheese and yogurt or use low fat versions. Also use a low fat beef mince or swap for a low fat turkey or chicken mince. For low carb, use a lower carb pasta option.
