Ayam Pongteh

Ayam Pongteh is one of the easier dishes to cook in a Nyonya cuisine. It’s a a one pot stew dish!

Ingredients
  • 1kg Chicken (chopped)
  • 100g Broccoli
  • 50g Mushrooms (sliced)
  • 25g Kidney beans (soaked in water overnight)
  • 470g Water
  • 1 tbsp Peanut Oil or olive oil
  • 3 tbsp Tau chu
  • 3 Onions (diced)
  • 10 cloves Garlic (sliced)
  • 5g Coriander leaves (chopped)
  • 1 tbsp Dark soy sauce
  • 1 tbsp honey (optional)

Instructions

1.

Heat a large pan on medium heat, add in peanut oil, sliced garlic and diced onion, stir everything till slightly caramelized (about 3 minutes).

Then add in Tau Chu and honey (if using) and continue frying for 1 minute.

Add in chicken, broccoli, mushrooms and kidney beans.

Add in water and 1 tbsp of dark soy sauce. Let it simmer for about 20 minutes or until the chicken is tender and cooked through.

Place the finished stew in a bowl, garnish with chopped up coriander leaves and serve.

Serve with vegetables for additional fibre.
