Apple crumble overnight oats

A delicious update to classic overnight oats, with the wonderful flavours of apple crumble.

Ingredients

Oat mixture 

  • 150g plain Greek yogurt 
  • 1 apple, grated 
  • 1 tbsp honey or maple syrup
  • 1 tsp cinnamon
  • 75g oats
  • 2 tbsp chia seeds 
  • Milk to desired consistency

 Crumble topping 

  • 2 tbsp oats 
  • 1 tbsp pumpkin seeds 
  • 2 tbsp oat flour (blended or ground oats) or almond flour or wholewheat flour
  • 1 tsp butter
  • 1/2 tsp maple syrup or honey
  • Sprinkle of cinnamon (optional)

Instructions

Mix all of the oat mixture ingredients and then add milk to achieve your desired consistency, (I used 100ml but this could be different depending on the thickness of your yogurt. I like my overnight oats fairly thick but still easily stirred with a spoon.)

For the crumble topping, mix together with your fingertips to combine.

You can add the crumble directly on top of your overnight oats. Alternatively, you can pop the crumble on a baking tray and place in the oven at 180c for about 5 minutes, checking frequently for burning.

Tip

For a lower carb option, omit the crumble topping, the honey/maple in the oat mixture, and use less oats and more chia seeds. For a lower fat option, omit butter in the crumble topping and use a fat free yogurt.
